How Chia Pudding Is Bringing Sexy Back: A Recipe

I know what you are probably thinking, another hipster chia pudding recipe? I thought the same thing when I put this one together.

To be honest, I am not a big fan of the consistency of chia pudding. It’s slimy and resembles, for lack of a better word, tadpoles. I was hesitant to make this, but I was at the start of my elimination diet and I needed to find a variety of breakfast and snack options so I gave it a try.

What Are Chia Seeds?

According to Healthline.com, chia seeds come from the desert plant Salvia hispanica. It’s a member of the mint family and its origin is believed to be in Central America.

Chia seeds are an ancient superfood. They were a staple in the ancient Aztec and Mayan diets. The seeds were known as runner’s fuel because they are a concentrated protein source that is rich in fiber. They are also loaded with antioxidants, so yay!

The Healthline.com article also states that chia seeds may help reduce chronic inflammation! This is big. I suffer from eczema which is a form of chronic inflammation. Keep in mind that more studies are needed about this but it doesn’t hurt to sprinkle some chia seeds on your breakfast a few times a week. 

This Is Great. How Can I Add Chia Seeds To My Diet?

Chia seeds are loaded with nutrients and therefore are good for your body. It has been said that chia seeds are some of the healthiest foods on the planet. They are easy to add into your diet. Outside of making them into pudding you can easily add them to smoothies, baked goods, or sprinkle them on your cereal. You can also use them to thicken sauces or replace eggs in baking.

Chia seeds thicken in thicken in liquid for 5 to 10 minutes. They then resemble fish eggs in look and consistency. Blending them always helps to make them more palatable.

If you don’t like the consistency of chia seeds when they are added to a liquid, then you can blend the chia seeds in milk, or whatever liquid you are using until smooth. Blending takes away the unpleasant consistency and makes it much more palatable. ⁠⁠

Now it’s time to get to the recipe. ⁠⁠I was skeptical at first when I I was putting this recipe together, but I was pleasantly surprised by how it turned out. It’s easy to make and super tasty. ⁠⁠

Peanut Butter and Strawberry Chia Pudding

Course Breakfast, Snack
Servings 2 servings

Equipment

  • Blender
  • Two 8oz mason jars with lids.

Ingredients
  

  • 1/4 cup Chia seeds
  • 1 cup Almond milk You can also use any other non-dairy milk
  • 1 – 1 ½ tbsps Brown Rice Syrup You could also use honey or maple syrup
  • 1/2 cup Frozen Strawberries (Thawed) You can use any type of frozen fruit
  • 2 tbsps Peanut Butter I use all natural

Instructions
 

  • 1. In a large bowl, combine the chia seeds with the milk and whisk well. Refrigerate for at least 20 minutes or overnight to thicken.
  • 2. Once the chia seed and milk mixture is has thickened, pour into blender and add brown rice syrup. Blend until rice syrup is well incorporated and the chia seeds have been ground up.
  • 3. Divide the thawed berries between 2 mason jars and add the chia pudding mixture on top. Top with peanut butter.

Notes

Store covered in the fridge up to 4 to 5 days.
Add a drizzle of maple syrup or honey for some extra sweetness.

I know there may be some haters out there who think chia pudding is just a millennial trend that it is past its prime, but to be honest it’s a great breakfast or snack. I was honestly so sad when I found out I would have to go on this elimination diet. My eczema got so bad and my naturopath and I had run out of options. We did everything to avoid going on an elimination diet. Going on one of these diets in the middle of a pandemic was both depressing and stressful. The last thing I wanted to do was make chia pudding, but I had to do something because living with eczema was doing more harm to my body and mental health than good. I couldn’t ignore it anymore. 

When I finally gave in and leaned into the elimination diet I got excited about exploring and inventing new dishes. This chia pudding was one of them. I gave it a chance and it’s great.

I am the healthiest I have ever been and that is in part to giving this recipe and others like it a try. I think that is a big win for me. I hope you give it a chance too.
